Stachys byzantina is a gentle giant, known as "Lamb's-ear", producing curved leaves covered in silky-lanate, white-grey hairs and soft purple flowers throughout the summer.

The leaves are soft to the touch, silver grey and lance shaped.

The flowers are small and light purple, growing on tall spike-like stems above the basal leaves.

  • The plants are mostly evergreen but can shrink back during cold winters and regenerate new growth from the crowns the following year. A little pruning can help them bounce back more quickly
  • Elegant and light grey all year round, they can bring a certain je-ne-sais-quoi to a particularly dark patch of a garden.
  • They work both as a ground cover and, in the summer, as a stately flower.

In Brazil, the leaves can sometimes be found deep fried - like fish - and served with a slice of lemon as a snack - it sounds delicious!
